化学性质 无色结晶。熔点100℃，相对密度1.595（20/4℃），沸点约140℃（分解）。易溶于水。1g该品能溶于1.4ml醇、1.7ml醚、0.7ml甲醇、2.3ml丙醇，几乎不溶于苯。具有适宜的酸味。
用途 用于制造酯类；用于络合剂和调味剂。按我国gb 2760-90规定，可用于各类食品。作为酸味剂，可代替柠檬酸使用（约80%），特别适用于果冻及水果为基料的食品。该品有保持天然果品色泽的作用，亦可作为果胶的萃取助剂，促进酵母生长用剂，配制无盐酱油、食醋，提高腌菜用味及人造奶油、蛋黄酱等的乳化稳定剂。广泛用于各种防腐、调味等复配添加剂。
